ERWANTO & ROHMAN 02/10/2020 13 Processing Livestock Livestock are processed to use all available parts: Meat

Hide for leather in cattle Bone meal Blood meal Hoofs and horns Fatty acids Processing Poultry Steps in processing: 1. Stunning is done to make the bird unconscious Does not kill the bird Some religious groups require the animal not be stunned prior to

slaughter 2. Bleeding Cutting jugular vein without cutting the esophagus Processing Poultry 3. Scalding loosens feathers 4. Picking removes feathers Mechanical 5. Removing feet, neck, skin and preen gland Processing Poultry

6. Evisceration performed Removing entrails 7. Carcass is chilled Ice water Less than 40 degrees F Live Animal Manure Slaughtered (Exp: methane production) Meat (Exp: steak)

By-Product Non-Edible Intestinal Contents Edible Pharmaceuticals (Exp: Insulin) (Exp: fertilizer) Chilled (Exp: Oxtail, Meat from the tail) Heated

(Exp: Thongue) Hide Bone Blood (Exp: Leather) (Exp: Blood meal) (Exp: Bone meal) Further Processed Chemically Treated

(Exp: tripe, stomach of cow or pig) Frozen (Exp: Liver) Cured and/or Sausage Human Food Animal Feed Dried Sterilization by Heat

Dried (Exp: Gelatin) Dried (Exp: Blood ) BY- PRODUCTS OF SLAUGHTER Main product of slaughter is carcass meat Definition everything from abattoir or butcher shop not sold directly as food or not carcass meat Why treat? Rapid hygienic disposal, Avoid decomposition Avoid intolerable (Obnoxious) odors

Avoid contamination of fresh meat 4 th year Lecture 19 Animal Slaughtering by product consist: Produk Utama (main product), exp: Meat Hasil Ikutan (side product) Although by product but still be use and has some advantage utilization

Increasing economic Value and reducing environment polution Meningkatkan higiene dan sanitasi lingkungan misalnya melalui pemberdayaan limbah pemotongan ternak (Increasing sanitazion and Product hygiene) Menimbulkan industri baru yang berpotensi menyerap tenaga kerja dalam jumlah yang relatif besar. (potency as a new industry and Job oppoturnity) Increasing Farmer Income by Selling Animal ByProduct

Edible, hasil ikutan yang dapat dimakan. Meliputi: otak, hati, ginjal, limpa, lidah, usus halus, lambung, ekor, darah, lemak, dan kulit Inedible, can not consume. Meliputi: Kulit, bulu, lemak, tulang, kelenjar, tanduk dan kuku. Hasil ikutan dasar: Tulang Kulit

(1) A lot of (edible by products including organs) meat for human consumption. (2) Edible fats for shortening, margarine, sweets, and chewing gum. (3) Bone utilized in the mechanical deboning process to produce soft tissue or bones used in soup for human food, or bones used for buttons, knife handles, bone meal, mixed with pottery /goods from clay or used in refining/pure sugar. (4) Blood for human consumption and for blood meal, adhesives (glue), and fertilizer. (5) Glycerin for hundreds of industrial uses, such as nitroglycerin (medicine), ointment bases (soft cream), solvents, preservatives for food, or plasticizers. (6) Intestines for sausage casings, musical strings, and surgical ligatures.

(7) Gelatin for confectionery items, ice cream, and jellied food products. (8) Rennin used in cheese making. (9) Pharmaceuticals, such as adrenocorticotropic hormone, albumin, bilirubin, epinephrine, insulin, liver extract, pepsin, pituitrin, testosterone, thromboplastin, thymocrescin, and thyroxin. (10) Organ parts for implantation into humans, such as heart valves, skin, and bones, and, experimentally, even whole hearts. (11) Livestock feed (usually high in protein or fat or minerals) manufactured from by-products. (12) Pet food and feed for aquatic farming. (13) Hides and skins for use as fur, leather, or leather goods.

(14) Wool for clothing, furniture, and lanolin extraction. (15) Inedible fats used for many industrial products, such as tires, lubricants/oil, insecticides, and germicides. (16) Hair for brushes, felt/wool combination, rugs, upholstery/ chair covers, plaster/wall covers binding, insulation/electricity stop, and athletic equipment. (17) Feathers for insulation, decorative items, pillows, sporting goods, and animal feed. (18) Glue used in carpentry, for sizing, sandpaper, emery cloth/a very hard mineral that is used for polishing things and making them smooth, and making boxes and plywood.

(19) Super foot oil used in the leather industry and as a lubricant. (20) Fertilizer applied to soil is manufactured from animal byproducts. (21) Animal manure used as fertilizer, animal feed, and/or methane production. Derivative Product of Pig OFFAL

(1) There must be a practical commercial process for converting the animal by-products into a usable commodity. (2) There must be an actual or potential market for the commodity that has been produced. (3) There must be a large enough volume of economically priced animal by-product material in one location for processing. (4) There must be some method of storing the perishable product before processing and to store the manufactured product after processing. (5) There is often a critical need for highly technically trained operatives.
